Egg Muffins

Here is a really easy recipe for a healthy (and portable!) breakfast item.


  • 9-12 eggs
  • 1/2 pound breakfast sausage (use vegan, if desired)
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/2 cup shredded cheese (I actually didn’t have any, but Mexican or cheddar would be good!)
  • salt and pepper to taste


Cook sausage completely through.

Beat the eggs in a medium-sized bowl.

Once the eggs are beaten, add in the peppers, onion, salt and black pepper.

Spray one twelve muffin pan with lots of cooking spray (will help brown the edges of the muffin) and fill each 3/4 with the egg mixture. Sprinkle sausage and cheese into each muffin.

Bake at 350 degrees for 20-25 minutes or until the egg is fully cooked.
