A Healthy Dinner
…After an Unhealthy Weekend
Its funny how while having visitors in town I too, unfortunately, end up eating like I am also on vacation. After a weekend filled with craft beer, big meals and fried snacks, it is time to get back to normal.
Luckily, we had brought our friends to the Ferry Building Farmer’s Market so we had some fresh veggies and portobello mushrooms on hand.
On the menu:
Grill portobello caps with salt and pepper until all the water is cooked out. Top with cheese and cover to melt. Assemble the burger on a fresh bun and add sliced tomatoes, avocados or veggies of your choice!
Apple Cider Vinegar Salad Dressing
1 cup of olive oil
1/2 cup of Apple cider vinegar
1 teaspoon of onion powder
2 tablespoon of whole grain mustard or djion type mustard
2-3 cloves of garlic minced
1/2 teaspoon of dried thyme
1/2 teaspoon of dried basil
1 teaspoon salt
Toss with fresh spinach.
Spray with cooking spray or olive oil and sprinkle with salt & pepper.
